Sweet Sweet delicious corn
Description
During the end of rauamati sweet corn becomes plentiful, cheap and full of goodness. Providing a wide range of nutrients including zinc, iron, selenium, potassium, Vitamin C and some B group vitamins – folate, thiamine, riboflavin. It is also a valuable source of fibre, protein and starch and it has more protein than most other vegetables. Great by itself as a snack or as part of a meal there are many ways to cook or incorparate corn into a dish. Try microwaving, boiling, steaming or BBQ corn all methods are quick and easy.

Instructions
Microwave – Place the entire corn cob in the microwave (including husk). Cook on high power for 3-4 minutes per cob. Allow to cool for a few minutes so that you can hold it or use a tea towel to hold it while you remove the husk. Season with salt, pepper and a small amount of margarine.
Boiled – Bring a large pot of water to the boil. Remove all the husk (outer leaves ) from the corn cob. Cut the corn into the desired size (i.e in half) place in boiling water. Once the water returns to the boil the corn is ready it will be bright yellow in color. Drain off water and serve.
BBQ -
1. Tinfoil Option – Remove the husks from the cobs. Wrap each cob in tinfoil. Place onto grill, into the oven, or onto the BBQ.
OR
2. Cook in full husks (leaves) - Soak the corn cobs in cold water at least 30mins. Remove three or four outer layes of the husk and also remove the silk ( those stringy bits on the corn). Save the removed leaves. At this point you could add extra flavour to the corn ( i.e brush with melted butter mixed with dried herbs, chilli or paprika). Close back up the husks and use the removed leaves to tie back up the husks enclosing the flavoured corn. Place or BBQ or grill for 10-15 minutes. Turn the corn while cooking to prevent burning the husks off. Once cooked remove husks and serve
3. Naked BBQ corn – Remove all of the husk and leaves. Place onto grill or BBQ. Turn frequently and watch to ensure cob is not completely blackened at the end.
