Kawakawa Spritzer
Description
This is a refreshing beverage during the summer months. While it is fizzy it has a lot less sugar than normal soft drinks and has a spearmint taste. It is also a quick delicious non alcoholic option to have available when you have whanau and friends over the summer.

Ingredients
| 1 1⁄4 | Litre | soda water |
| 1 | Cup | boiling water |
| 1 | Tablespoon (Metric) | manuka honey |
| 1⁄2 | Teaspoon (Metric) | dried kawakawa |
| 1 | lemon | |
| 2 | Cup | ice |
Instructions
1. Mix dried kawakawa boiling water and manuka honey together in a cup. Infuse and allow to cool down
2.Pour into glass jug fill with ice and top up with soda water serve with slices of lemon and fresh kawakawa leaves (optional)
Notes
To dry kawa kawa leaves quickly: Wash and pat Kawakawa leaves dry. Place inside a folded Paper kitchen towel and microwave for 30-40 seconds on high. Unwrap and let cool. Leaves can be stored in an airtight container for further use.
